Here’s my version of our favorite crockpot dinner ever, chicken tikka masala.
Recipe adapted from Real Simple.
Crockpot Chicken Tikka Masala
1 15 oz. can crushed tomatoes
1 medium onion, diced
2 cloves garlic, diced
1/2 head of cauliflower, chopped
2 TBS tomato paste
2 tsps garam masala spice
1 1/2 lbs. boneless skinless chicken (I use either breasts or thighs, both work well)
salt and pepper
1/2 cup heavy cream
Dice onions and garlic. Chop cauliflower. Chop chicken into cubes. Combine all ingredients EXCEPT heavy cream in the crockpot (Or in the freezer bag, if you’re freezer cooking). Cook in crockpot until chicken is tender. On low approximately 6-8 hours. On high approximately 3-4 hours. I usually cook it straight from the freezer and these times work out. I just cut the freezer bag off and dump the whole thing in the crockpot.
Add heavy cream just before serving. Serve over rice. Serves 4.
It usually serves Phil and I for dinner and then leftovers for lunch the next day. It is not very spicy, but it is delicious. If you wanted more spice, you could add red pepper flakes.
