TWD: Pumpkin Muffins

Pumpkin muffins from page 13 of Baking: From my Home to Yours.

didn’t have either walnuts or sunflower seeds. didn’t buy any either because we 
are trying to keep the grocery bill super low right now.
forgot to add salt. 
Reasons I hate my silicone muffin pan:
STILL NEEDS TO BE GREASED, contrary to Dorie’s instructions and what everybody knows, mine still needs to be greased or use muffin liners or else the muffins won’t come out.
muffin holes are a little too small for the liners and they crease up to fit in
really hard to clean, gets ugly black stains

can’t be used without a cookie sheet underneath because it’s made of floppy floppy silicone. 
I didn’t burn them.
They were pretty bland. (salt might have helped)
The pumpkin flavor is very mild. 
I still have half a can of pumpkin leftover.
Pictures of food are hard to take and seem to come out blurry.


  1. 🙁 sounds like you really have a time with your muffin pan! Did you do anything with the leftover pumpkin yet?

  2. Sometimes you can bake with just the muffins cups on a cookie sheet without a pan. Maybe next time you can buy those containers with the foil muffin cups. I think you could just skip the silicone muffin pan all together.

    On the second bake I added more pumpkin. I liked it better.
